A Clean Plate

The hospitality industry is responsible for 600,000 tonnes of food waste per year.  In fact, it is estimated that for every meal eaten in a UK restaurant nearly one kilo of waste is produced through preparation, spoilage and leftover food.

The Sustainable Restaurant Association (SRA) launched 18 months ago to help address this problem. Although it has only existed for a short period of time, the organisation has already done a great deal to protect the environment and create financial savings for eateries.

    Food waste is a scandal. I am happy to learn that there are many responsible restaurateurs who are taking such positive action. In my experience in the U.S. portion size is also part of the problem. Lets hope this is not an area where the U.S. will influence Europe, lets educate them and it may help with the obesity issue which I understand is a challenge which Michelle Obama has tried to address.
