A Clean Plate
The hospitality industry is responsible for 600,000 tonnes of food waste per year. In fact, it is estimated that for every meal eaten in a UK restaurant nearly one kilo of waste is produced through preparation, spoilage and leftover food.
The Sustainable Restaurant Association (SRA) launched 18 months ago to help address this problem. Although it has only existed for a short period of time, the organisation has already done a great deal to protect the environment and create financial savings for eateries.
